
Monterrey Chicken
Monterrey Chicken -- Juicy chicken covered in barbecue sauce and smothered with cheese, bacon, and green onions.
Ingredients
- 1 pound boneless, skinless chicken breasts (approx. 4 breasts)
- 1/4 cup low carb BBQ sauce
- 1/4 cup real bacon bits
- 1 cup colby & Monterrey Jack cheese , shredded
- 1 small can Rotel
- 2 tablespoons green onion
- salt and peppter , to taste
Instructions

Preheat oven to 400 degrees

Pound chicken breasts to flatten. Season with salt and pepper.

Grill chicken over medium-high heat until no longer pink. Be careful not to overcook the chicken. Place cooked chicken breast on a foil lined baking sheet.

Spread BBQ sauce over each chicken breast, then sprinkle cheese, Rotel, bacon bits, and green onions on top.

Bake for 5 minutes in the oven, or until cheese is melted.
