  • 1 pound boneless, skinless chicken breasts (approx. 4 breasts)
  • 1/4 cup low carb BBQ sauce
  • 1/4 cup real bacon bits
  • 1 cup colby & Monterrey Jack cheese , shredded
  • 1 small can Rotel
  • 2 tablespoons green onion
  • salt and peppter , to taste


  1. Preheat oven to 400 degrees

  2. Pound chicken breasts to flatten. Season with salt and pepper.

  3. Grill chicken over medium-high heat until no longer pink. Be careful not to overcook the chicken. Place cooked chicken breast on a foil lined baking sheet.

  4. Spread BBQ sauce over each chicken breast, then sprinkle cheese, Rotel, bacon bits, and green onions on top.

  5. Bake for 5 minutes in the oven, or until cheese is melted.
